Mitchell started his career at the age of 15 in a small family owned Spanish restaurant called ‘Pimento’ in Paddington. His passion for fresh seasonal produce grew after spending time working in far north Queensland at ‘Salsa Bar and Grill’. Making cheese, breaking down whole animals, making bread, and having an ever-changing specials menu, kept Mitchell on his toes and thinking about food combinations all the time. After working with Martin Boetz at Longrain Sydney the next step was accepting a senior role as Sous Chef of Rock Restaurant in Pokolbin.
Mitchell is in love with the restaurant way of life, from the rush of service, learning new techniques, utlising ever-changing ingredients, and the comradery team feel. Muse has had the pleasure of having Mitchell lead our kitchen as our Head Chef from December 2015.
Melinda has a true passion for wine and hospitality. Along with her studies through the WSET program, Melinda’s wealth of knowledge has grown through positions across Australia, which include cellar door manager, maitre d’hotel, restaurant manager and sommelier.
Melinda believes in the need for a deep knowledge of how food and wine, beer, spirits and other beverages can work in harmony together. Whether it be assisting you in finding the perfect wine pairing, or simply preparing a refreshing mocktail, Melinda hopes she may ensure your visit to Muse is a memorable one.
Linda, a true definition of an industry professional, has 30 years experience in hospitality, 8 years of which have been as part of our Muse Restaurant team.
An avid traveller and educator, Linda has worked both internationally and across Australia in education, management and consultancy roles.
We are thrilled to have Linda back and leading our front of house team.
