MITCHELL BESWICK

Head Chef                

Mitchell started his career at the age of 15 in a small family owned Spanish restaurant called ‘Pimento’ in Paddington. His passion for fresh seasonal produce grew after spending time working in far north Queensland at ‘Salsa Bar and Grill’. Making cheese, breaking down whole animals, making bread, and having an ever-changing specials menu, kept Mitchell on his toes and thinking about food combinations all the time. After working with Martin Boetz at Longrain Sydney the next step was accepting a senior role as Sous Chef of Rock Restaurant in Pokolbin.

Mitchell is in love with the restaurant way of life, from the rush of service, learning new techniques, utlising ever-changing ingredients, and the comradery team feel. Muse has had the pleasure of having Mitchell lead our kitchen as our Head Chef from December 2015.


STEPHANE POMMIER

Sommelier 

Stephane obtained his degree in wine making from Beaume, France in 1993. After 13 years of wine making, Stephane set his sights on the Hunter Valley, acting as sommelier for ‘Rock Restaurant’ and Muse, as well as offering services as a wine consultant, specializing in wine list development, education and training.

With a true passion for wine and genuine hospitality, Stephane will assist you in finding the wine perfect pairing to accompany your visit to Muse


LYDIA McNAUGHTON

Restaurant Manager

Lydia joined the team at Muse in January 2012. With over 15 years of hospitality experience, Lydia has held roles in restaurant and event management, which included time spent at Peppers Guests House, Tuscany Wine Estate and Verandah Restaurant.

Whilst leading the front of house team at Muse Restaurant, Lydia is also a TAFE NSW teacher, passing on her wealth of expertise to the next generation of young hospitality professionals

 


RENEE FOSTER

Functions and Reservations Manager 

Renee started her career in the theater, undertaking roles in Stage Management, Lighting and Audio design.  From there Renee’s focus moved to Hospitality and Events, spending time at The Sebel Kirkton Park and Robert’s Restaurant before joining the Muse team in November 2009.

With a focus on attention to detail and customer service, Renee plays a key role in the everyday operations of Muse
